Chicken Surprise

As we all know too well, money is tight and everything we need is expensive. So I have decided that I am going to create some dinner menus that are healthy, taste good, easy on the wallet and I will include W.W. Points Plus with all the meals.

Some meals I wont be able to include cost per item on every ingredient since I already have it on hand.

So, I start today!

I got this recipe from my Good friend Janet. I have changed some things to make it a bit lighter.

Janet's Chicken Surprise (on the lighter side)


5 boneless chicken breasts $3.50 (on sale)
1 can of Cream of Chicken Soup .50
6 oz. of White Wine Pennies - on hand
1/8 cup melted butter Pennies - on hand
1-1/2 cups low fat shredded mozzarella cheese - $1.50
1 - 6oz. pkg. Stuffing Mix .85
pepper to taste pennies - on hand
No fat cooking spray pennies - on hand


Spray 9x13 baking dish. Place chicken on bottom. Pepper to taste. Cover chicken with Cheese. Mix soup (undiluted)and wine. Pour over chicken. Combine melted butter with stuffing. Place over chicken. Cover.


Bake 325 for 1 hour
Uncover and bake an additional 1/2 hour.

Serve with your favorite veggies! Frozen Broccoli - .69

5 Servings = 12 points per serving
Total meal cost $5.66 - 1.13 per person.
